I was diagnosed as gluten intolerant at 22 years old. There’s lots of foods I miss since I found out that gluten had to be cut out of my diet.
Fresh bread rolls.
Obviously there’s gluten free version of these foods, but they are generally not the same.
But one thing that works well as a gluten free version is cheesecake.
Cheesecake is one of my all time favourite desserts to eat.
These lemon cheesecakes are perfect for afternoon teas, parties, or even your own high tea! I made some for a work colleagues birthday and they were a hit!
I’ll definitely make them again soon, and next time I will try different flavours or toppings.
This recipe makes around 18 cupcake size cheesecakes. I find it’s a little more time consuming with mini cheesecakes, but it ends up being easier as you don’t have to deal with that pesky cheesecake tin potentially ruining your baking.
You can use this recipe for a larger cheesecake in the cheesecake tin if you wish.
- 500g cream cheese
- 1 cup caster sugar
- 2 tbsp lemon juice
- 1 tsp lemon rind
- 4 eggs
- 12 gluten free arrowroot biscuits
- 60g butter
- Punnet of strawberries
- Punnet of blueberries
- 2 tbsp icing sugar
Preheat the oven to 180 degrees (fan forced oven). Prepare a muffin tin with paper patties.
Add biscuits to a food processor and mix until biscuits form fine crumbs.
Melt butter in microwave. Mix butter into biscuit crumbs. Spoon a tablespoon of the mixture into each paper patty and push down until it is firmly packed at the bottom of the patty.
Add the cream cheese, sugar, and lemon to a large mixing bowl. Use an electric mixer to beat the items until they are light and creamy.
Beat eggs one at a time into the cream cheese mixture.
Pour cream cheese and egg mixture into each of the patties.
Bake for 20 minutes, or until slightly risen and forming small cracks on the surface.
Remove from the oven and allow to cool. Once cool, top with sliced strawberries, fresh blueberries and a sprinkle of icing sugar.
