Vegan Scrambled Tofu: the Healthy & Cruelty-Free Alternative

For those who follow me on social media, you would have seen that I completed the Veganuary challenge in January. It was really a interesting challenge that completely opened my eyes to new possibilities in the kitchen.

One new recipe I tried was scrambled tofu. I already liked the taste of tofu and occasionally ordered it when eating out. But I never knew how to cook it properly.

Until my vego friend explained that using firm or hard tofu usually gets the best results. She was also doing Veganuary and suggested that I try scrambled tofu instead of scrambled eggs for one of my meals.

So I decided that it was the perfect time to try using firm tofu for new recipes – and I was pleasantly surprised!

The thing that I love about this recipe is that it is so filling and I don’t think it tastes much different to eggs. The texture is slightly different, but the combination of the herbs, tomatoes and avocado, really makes it a delicious meal.

This recipe can be changed easily to suit your likes or dislikes. You can easily add in more veggies like capsicum or mushrooms, or you could easily omit a spice you don’t like.

It’s so filling and tasty that you’ll be glad you’ve started the day with this dish! But it’s so good I would happily have it for lunch or dinner as well! It’s a simple dish that can be served in its own, or you can have it with toasted bread to fill you up more.

I think it’s a really great alternative to eggs and I’m really glad that I tried scrambled tofu. I’ll definitely be cooking this again in the future!

Ingredients

For 2 medium sized meals

  • Firm Tofu
  • 1/2 small brown onion
  • 1 clove garlic
  • Tbsp chopped fresh parsley
  • Handful of cherry tomatoes
  • 1/2 cup diced capsicum
  • 1/2 avocado
  • 1/4 tsp paprika
  • 1/4 tsp turmeric
  • 1/4 tsp ground cumin
  • Pinch of salt & pepper
  • Tsp olive oil
  • Optional: toasted bread or bun to serve with

Method

1.Add oil to hot pan. Sauté onions and garlic.

2. Add capsicum and cooked for 2 minutes. Add tomatoes and cook for another minute.

3. Use hands to crumble tofu into pan. Add herbs and season with salt and pepper.

4. Sauté until tofu is fully coloured with herbs and turns a yellow colour.

5. Toast bread. Chop avocado into cubes.

6. Place toast on plate and use vegan margarine such as Nuttelex. Pour desired amount of mixture over bread. Add avocado on top. Season with salt and pepper. Enjoy!

If cooking for yourself you can put leftovers in fridge and have as a meal the follow day.
